I HAVE CONVERTED an old stainless steel pressure cooker (keeping the safety valves) to be pressurised with a hand pump (not a compressor) to a maximum of 20 psi.
- I add 1 to 3 dominoes per 2 litres of flavored spirit, and weigh the wood down to the bottom of the vessel.
- I pressurise at 20 psi for 1 hour, and release for 1 hour, and repeat to get the required aging.
- I like 4 cycles, or keep repeating until you get the result you want.
It is easy to over-oak, so start with less and build up.
